Meatless Monday

I would say that fully half of the meals that I make are vegetarian. I'm not sure how this happened, but I find that it really helps with our grocery bill. Making sure that our family gets enough protein can be a challenge though, so we end up eating a lot of beans.

This is a recipe for Corn and Black Bean Quesadillas. I slightly adapted the original recipe because I was concerned it would be too spicy for the boys. Also, I thought the butter and oil to be completely unnecessary. Frankly, I didn't think they would eat it at all. Imagine my surprise when they both ate it like it was pizza. Even Gummy Bear thought it was tasty.

Ingredients

  • 1 small onion, finely chopped
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 1 (12 ounce) bag of frozen corn, dethawed
  • 1 tablespoon brown sugar
  • 1/4 cup salsa
  • 8 (8 inch) whole wheat tortillas
  • 1 1/2 cups shredded Monterey Jack cheese, divided

Directions

  1. Spray non-stick cooking spray into a sauce pan. Stir in onion, and cook until softened, about 3 minutes. Stir in beans and corn, then add sugar and salsa; mix well. Cook until heated through, about 5 minutes.
  2. Heat a skillet on medium heat and spray with non-stick cooking spray. Place a tortilla in the skillet, sprinkle evenly with cheese, then top with some of the bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Repeat with remaining tortillas and filling. Makes about 6 quesadillas (or 4 plus extra bean mixture to eat on tortilla chips later).

I've done something similar with a Boboli pizza crust - corn, beans, cheese, sometimes diced chicken if we have some leftover from grilling, and tomatoes if your dad isn't eating it ;).

Sounds yummy! I try to do at least one meal a week meatless as well (usually Monday since it sounds best!)Eric isn't the biggest fan but I tell him to suck it up, it's good for his arteries

Thats great for you guys! We are actually on the same track with food, and I'd suggest maybe adding quinoa into your diet if you haven't yet, as it's a higher protein grain and we've pretty much moved into our diet in place of rice. Nolie has thankfully followed after mom and dad with spice though, as all her eggs get generous portions of garlic and other spices and we can't thank you guys enough for pushing us towards solids early!

Cathy - Ry is actually a really good sport about the no-meat meals. We had another tonight, and he didn't even mention it.

Jason - I have had quinoa before, but have held off on buying it because I'm unsure of preparation. We had lentils the other night instead of rice, and they were tasty. Maybe I'll buy a bag of quinoa and just give it a go.

If you have a rice cooker Quinoa is amazingly easy. Not all bags will list it, but just set your rice cooker to the standard white rice setting and do a 2:1 water to quinoa ratio. Walk away, come back when its done, let it go to room temp and mix in whatever you'd like (I'd suggest Cilantro and Lime). We've still got rice around but have switched mostly over to quinoa because of the protein content (and I actually think that its pretty tasty as well as being easier for Nolie to take down).

If you are sans rice cooker just do the same 2:1 liquid to quinoa ratio and simmer for 15 minutes. I have also read that you should rinse it beforehand. I just discovered this amazing grain a few weeks ago

I probably didn't mention the last meatless meal because it never occurred to me. Meat just isn't an essential ingredient anymore. Thanks to Jube for vastly increasing our dinnertime level of quality!
